The Birth

Umami Taste Experience is built from the fusion of the pleasure for taste and eye pleasing esthetics . Our food has inspired us to find a perfect logic of balance and harmony in our offerings. Our food and design create a successful synergy. Our project is striving to become the tradition and innovation in Japanese cuisine. The Umami’s fusion cuisine was born on May 2017, with the opening of its first restaurant in Seregno.


The Origin

“Umami (Japanese: 旨み、旨味、うまみ) represents one of the five fundamental tastes perceived by the human specialized receptor cells present in the our mouth (the others are sweet, salty, bitter and sour). In the Japanese language Umani translates to “tasty” and indicates for the accuracy/precision the taste of glutamate/glutamate taste, which is particularly present in foods rich in protein, such as fish and meat.”



Umami’s mission is built upon the harmony and perfection that is so important in oriental culinary tradition. Beauty, formal rigour and aesthetic sensitivity are rooted in this tradition and also characterize Japanese cuisine. Beauty and taste are the successful components of the Umami fusion cuisine, which wants to point out/draw attention how Japanese sensibility pleasure has many components: visual, gustatory and tactile.



Umami philosophy is to consider Japanese cuisine as a multi-sensory experience. A creative combination between Japanese tradition and culinary progress, which satisfies eyes and palate, through the creation of dishes with high nutritional value, with strong lightness characteristic.



Our chef and sushimen study creative and elaborated recipes, through basic techniques to satisfy the needs of our customers and the continuous changes of the market. The Umami restaurant staff intent is to make live guests a culinary experience at 360°, by offering some of the most classic dishes like sashimi and nigiri, to the most particular and fusion ones.

Friend of the Sea is currently a project of the World Sustainability Organization, an international trademark registered with humanitarian and environmental conservation mission. Friend of the Sea has become the leading certification standard for products and services which respects and protects the marine environment. We are very proud to have obtained their certification, that certifies not only the quality of our raw materials, but also that the products we use come from a fishing respectful of the marine ecosystem.
